Roasted Asparagus with Goat Cheese and Bacon




Cook bacon and crumble.Preheat oven to 500 degrees.Arrange asparagus on rimmed baking sheet. Drizzle with 2 Tbs olive oil and turn to coat well. Sprinkle with salt and pepper.Roast until asparagus is crisp-tender when pierced with a knife, about 7 minutes.Arrange asparagus on a serving platter. Sprinkle with goat cheese, then the bacon.Drizzle with lemon juice and remaining 2 tsp olive oil.
